We don't... but there is the assumption since there is a creature called the 'hydra'. To cut off one head, another will grow back - or sometimes more in its place. So I have heard that the demons are like hydra. But we do not know what it means to cut them down, if that means that it was enough to cut down the host such as Monika, or if the demon itself must be contained.
That is why some people believe there is more than one. Thot and Seinfeld, or perhaps John Cena.
Escha-san had killed in self-defense. There could have been two demons present we missed...? Perhaps one was inside the others and escaped when the host died.
